A Dish that Stands the Test of Time

Speaking of Thanksgiving, personally I love this time of year, if for no other reason than that I'm crazy about pumpkins. This recipe from Organic.org hails from the 17th century and is the perfect addition to your holiday feast — for those of you who aren't as singularly devoted to pumpkins as I am, feel free to substitute winter squash. —Mike Popalardo

New England Standing Dish (updated for your 21st century kitchen)

4 cups cooked squash or pumpkin, mashed
2 - 4 Tbs. butter
1 - 2 Tbs. of cider vinegar
1 - 2 tsp. of ground ginger (or any combination of nutmeg, cloves, cinnamon, and or pepper, to taste)
1 tsp. salt

Place the squash, butter, vinegar and spices in a saucepan over low heat. Stir and heat until all of the ingredients are well combined and hot. Adjust the seasonings to your liking and serve. Serves 8.

Air, Air Everywhere

In the Fall Issue of greenlight we gave you a rundown on the hottest, practical, green cars on the market. Some of you asked us to tell you what's down the road. Take a deep breath as you may not believe the amazing new air-powered car — along with a few other current and future projects powered by air.

 

Air CarHow about a car that literally runs on air? The Air Car was developed by ex-Formula One engineer Guy Nègre. Some 6,000 of these vehicles are set to appear on the streets of India in 2008. While the U.S. is not on the immediate list of countries with signed deals, 12 other countries are, including Germany, Israel and South Africa. Can we be far behind? Water off the grid: The Dolphin 2 from Air 2 Water truly pulls water straight from the air, purifies it and makes it ready for human consumption. Okay, we won't lie, this residential unit isn't the prettiest appliance or the cheapest on the block but if you already use a lot of bottled water this might be the right alternative for you.

This air propelled toilet reduces water used for flushing to 1.5 quarts and takes about 3 seconds for an entire flush to occur. That's the good news, the bad is it's not yet available for sale but we love this idea and hope Propelair can find the investment they’re looking for.

In the meantime, a dual flush system (which allows you to decide how much water you need on an "as needed" basis) is a practical alternative. If you're not ready to take the plunge (so to speak) for less than $200 you can transform your current toilet with the DIY Two Flush system.
